Merlot Cabernet - Talìa WINE MAKING AND AGEING

 After de-stemming, the grapes are left to macerate in temperature-controlled stainless steel vessels for about 10 days undergoing repeated pumping and shedding for about ten days. Aged in French oak barrels.
 
DESCRIPTION

Soft and seductive on the palate, showing all its gustatory power thanks to notes of red berry such as blackberries and cranberries, with delicate hints of cinnamon, eucalyptus and cherry.
 
HOW TO SERVE

Serve in medium-sized glasses at a temperature of 16-18 ° C.

Talìa Syrah WINE MAKING AND AGEING

 After de-stemming, the grapes are left to macerate in temperature-controlled stainless steel vessels for about 10 days undergoing repeated pumping and shedding. Matured in stainless steel vessels for a period of 10-12 months.

DESCRIPTION

 The Syrah gives life to a red colour with purple hues, all its complexities are revealed to the nose: fruity and floral, with the emergence of persistent  hints of red fruits such as black currant, blueberry and cherry, blended with delicate suggestions of spices and vanilla. Its palate is dry, full-bodied, tannic and fairly alcoholic, ideal with mildly mature cheeses and red meats. An unexpected combination with grilled tuna steak: an original pairing but very impressive.

 Serve in medium-wide goblets at a temperature between 16 °-20 ° C

Talìa Nero D’Avola  WINE MAKING AND AGEING

 The grapes are vinified in stainless steel vessels with surface maceration, at a temperature of 18 ° C for about 10 days, undergoing repeated pumping and shedding. Aged in Seguin Moreau barrels for about three months.

DESCRIPTION

 Single variety wine making, Nero d’Avola produces full-bodied wines with high alcohol content and high sugar content from its must. Deep, ruby, red in colour with vibrant purple hues and a complex taste of its peculiarities. On the nose it is fragrant and articulate, its primary aromas of fruit with distinctive grape flower stand out. Its flavour is delicate and elegant, warm and dry, full-bodied and rich in personality. Nero d’Avola is served with grilled meats and mature cheeses.

HOW TO SERVE

Use a medium to large size or balloon glass or one of ample light to allow the diffusion of perfumes. Serving temperature 16 ° -18 ° C.

Soft pressing, temperature-controlled fermentation, aged in stainless steel vessels matured “sur-lie” (on lees) with monthly (lees stirring) “batonnages” for three months.
 
DESCRIPTION

 A pleasant straw- yellow colour with greenish reflections; on the nose it is intense, aromatic, enveloping and persistent. Its palate is dry, with a good
flavour with fresh and dry notes. Hints of tropical fruit, white peach and vanilla make it interesting and refreshing. Perfect as an aperitif, especially
with mature and strong cheeses, enhancing the taste of spicy first courses, fish soups and shellfish.

HOW TO SERVE

Zibibbo is strictly served cold, at a temperature between 8 ° and 12 ° C.

DESCRIPTION

 The Grillo grape gives the wine freshness and perfume, with citrus and mineral notes and hints of green tea and sage. In the mouth it maintains a pleasant freshness that is combined with good alcohol, making it a wine to be drunk young that also recognizes a short aging in the bottle. With fish or white meat dishes this wine expresses its full potential, perfect with couscous with fish, its flavour is enhanced, thanks to its fresh and dry notes on the palate.

Soft pressing, fermentation at controlled temperature, aged in French oak barrels for about three months

DESCRIPTION

Its straw colour, alive with greenish reflections succumbs the nose to its great and exuberant soul with delicate hints of peach, ripe apple, passion fruit with sweet suggestions of vanilla from the aging process in oak barrels. The palate remains fresh with a great balance between tartness, flavour and volume. Perfect coupled with grilled fish, white meat, and well -matured cheese.
